Thai Cucumber Salad

 
Our New and Improved Thai Cucumber Salad Recipe


Early summer means cucumbers, and our Happy Kitchen team has a delicious cucumber side dish or snack to share. Thai Cucumber Salad is tried and true Happy Kitchen recipe, but like our White Bean and Kale Soup, we wanted to review it for the next edition of our cookbook.

The biggest change we needed to make was to the sugar. We reduced the sugar to one teaspoon, so it still adds great flavor and highlights the other ingredients, without overdoing it. If you’re already used to a low-sugar diet, you could probably cut it back even more.

SFC Farmers’ Market Downtown, Sat. June 9th from 9am-1pm:

  • Summer Bounty: Temps are rising and summer’s bounty is upon us! Head over to Oma & Opa’s Farm to pick up early season okra, super tender and perfect for frying or pickling. While you are there check out the huge heads of elephant garlic, first of the season cucumbers and still delicate bags of rainbow chard.
  • Franco-breakfast: Belle Vie Farm is the place to go for rillettes, pâté, macarons and other French delicacies. This weekend ask for a classic Breton galette, a savory buckwheat (gluten-free!) pancake filled with farm fresh duck eggs, seasonal veggies, creamy cheese and in-house sausage.

 
SFC Farmers’ Market at Sunset Valley, Sat. June 9th from 9am-1pm:

  • Stay Cool: Beat the heat this Saturday at Sunset Valley with Mom n Pops paletas and aguas frescas! These all-natural and hand-made pops come in flavors like creamy lime, Abuelo’s chocolate, hibiscus mint and strawberry lemonade. Pick one up to keep your chill this weekend!
  • Happy Chicks: The wait is over! Our friends at Party Fowl Farm finally have pasture raised chickens. Grab one for your weeknight roast along with a slew of radishes, tomatoes, tomatilloes and other delicious veggies.

July 30, 6:30-8:30pm. Get to know the "7 Styles of Cheese" in Cheese 101 with Antonelli's Cheese Shop, and benefiting SFC! Antonelli's will guide you through each style of cheese and taste specific examples (both pasteurized and unpasteurized), accompanied by olives, nuts, and Easy Tiger bread. They'll also bring out a number of additional pairings like chutneys and charcuterie bites, depending on that evening's cheese selection.
